  • 1 cup (150 g) strawberries, hulled and sliced
  • 1 cup (150 g) blueberries
  • 1 kiwi, peeled and sliced thin
  • 1/2 cup (75 g) mandarin orange segments (fresh or canned in juice, drained)
  • Optional: a handful of fresh mint leaves for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 12-inch pizza pan or line it with parchment paper for easy cleanup.
  2. Unroll or press the refrigerated sugar cookie dough evenly onto the pizza pan, forming a smooth circle about 1/4 inch (6 mm) thick. Keep edges slightly thicker. If dough is too soft, chill for 10 minutes before pressing.
  3. Bake the cookie crust for 15-18 minutes, or until edges start to turn golden brown and the center is set but still soft.
  4. Cool the baked cookie completely on a wire rack (about 30 minutes) before frosting.
  5. In a mixing bowl, beat together softened cream cheese and butter until smooth and creamy (2-3 minutes). Gradually add powdered sugar and vanilla extract, beating until fluffy. Add a teaspoon of milk if frosting is too thick.
  6. Spread the cream cheese frosting evenly over the cooled cookie base, leaving a small border around the edges.
  7. Arrange sliced strawberries, blueberries, kiwi, and mandarin segments artistically on top of the frosting.
  8. Chill the fruit pizza in the fridge for at least 30 minutes to set the frosting and meld flavors.
  9. Slice with a sharp knife or pizza cutter and serve.
