A bubbly, festive mocktail with tart cranberry and fresh orange, garnished with rosemary and cranberries. Ready in under five minutes, it’s perfect for New Year’s Eve or any celebration.

Ingredients

  • 4 cups (960 ml) chilled sparkling water or club soda
  • 1 cup (240 ml) 100% pure cranberry juice (unsweetened)
  • ½ cup (120 ml) freshly squeezed orange juice
  • 2 to 3 tablespoons (30 to 45 ml) simple syrup or honey
  • ½ cup (60 g) fresh or frozen cranberries
  • 4 to 6 fresh rosemary sprigs
  • Orange slices or twists for garnish
  • Ice cubes as needed

Instructions

  1. Chill all ingredients (sparkling water, cranberry juice, orange juice) for at least 2 hours before serving.
  2. If using simple syrup, combine equal parts sugar and water in a small saucepan. Heat over medium, stirring until sugar dissolves. Let cool to room temperature.
  3. Wash cranberries and pick out any soft ones. Slice orange into thin rounds, then cut each round in half. Trim the bottom inch off each rosemary sprig.
  4. In a large pitcher, combine cranberry juice, orange juice, and simple syrup. Stir gently until sweetener is fully incorporated. Taste and adjust sweetness if needed.
  5. Slowly pour chilled sparkling water into the pitcher, tilting the pitcher to preserve carbonation. Stir gently with a long spoon (3-4 rotations).
  6. Add fresh or frozen cranberries to the pitcher. They will float and help keep the drink cold.
  7. Fill each champagne flute or glass with 3-4 large ice cubes.
  8. Pour the mocktail into glasses, filling about three-quarters full. Garnish with an orange half on the rim, a rosemary sprig tucked inside, and extra cranberries if desired. Serve within 10 minutes for maximum fizz.

Notes

For best results, chill all ingredients beforehand. Use unsweetened cranberry juice for proper tartness. Rosemary is highly recommended for aroma. The juice mixture can be made up to 24 hours ahead; add sparkling water just before serving. For a sugar-free version, use monk fruit simple syrup.
