  • 1 pound (450 g) large shrimp, peeled and deveined (wild-caught if possible)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili flakes (adjust to taste)
  • ½ teaspoon cumin
  • 1 tablespoon honey
  • Juice of 2 medium limes
  • Zest of 1 lime
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Wooden skewers soaked in water for 30 minutes

Instructions

  1. Rinse and pat dry 1 pound (450 g) of large shrimp, peeled and deveined.
  2. In a mixing bowl, combine 2 tablespoons olive oil, 3 minced garlic cloves, 1 teaspoon smoked paprika, ½ teaspoon chili flakes, ½ teaspoon cumin, 1 tablespoon honey, juice of 2 limes, zest of 1 lime, ½ teaspoon salt, and ¼ teaspoon black pepper. Whisk until thoroughly mixed.
  3. Toss the dried shrimp in the marinade, ensuring each piece is coated well. Cover and refrigerate for 15 to 20 minutes.
  4. If using wooden skewers, soak them in water for at least 30 minutes beforehand.
  5. Thread 4 to 5 shrimp onto each skewer, leaving a little space in between for even cooking.
  6. Preheat the grill to medium-high, around 400°F (200°C). Brush the grates lightly with oil.
  7. Place the shrimp skewers on the grill. Cook for 2 to 3 minutes per side until shrimp turn pink and opaque with slight grill marks.
  8. Remove from grill and immediately squeeze fresh lime juice over the skewers. Optionally, sprinkle with chopped fresh cilantro or parsley.
  9. Serve the firecracker grilled shrimp skewers warm.

Notes

Do not over-marinate shrimp to avoid mushy texture; 15-20 minutes is ideal. Pat shrimp dry before marinating for better grill marks. Soak wooden skewers to prevent burning. Use medium-high heat and flip shrimp only once. Shrimp are done when opaque pink with slight curl. For smokier flavor, add soaked wood chips to charcoal grill. If no grill available, broil or use grill pan.
