A delightful blend of sweet figs, savory prosciutto, and tangy goat cheese on a crispy homemade flatbread crust, perfect for a quick snack or elegant appetizer.

Ingredients

  • 2 cups all-purpose flour (240 g)
  • 1 teaspoon active dry yeast (3 g)
  • 3/4 cup warm water (180 ml) at 110°F (43°C)
  • 2 tablespoons extra virgin olive oil (30 ml)
  • 1/2 teaspoon salt (3 g)
  • 810 medium fresh figs, ripe but firm, sliced thin
  • 6 ounces prosciutto, thinly sliced
  • 4 ounces goat cheese, crumbled
  • 1 tablespoon fresh rosemary, finely chopped (optional)
  • 1 tablespoon honey, for drizzling
  • Freshly ground black pepper, to taste
  • Optional: balsamic glaze for finishing
  • Optional: a handful of arugula, added after baking

Instructions

  1. Activate the yeast: In a small bowl, combine warm water (110°F/43°C) and yeast. Stir gently and let sit for 5-7 minutes until foamy.
  2. Make the dough: In a large bowl, mix flour and salt. Pour in yeast mixture and olive oil. Stir until a shaggy dough forms.
  3. Knead the dough: Turn dough onto floured surface and knead about 8 minutes until smooth and elastic. Add flour if sticky but keep slightly tacky.
  4. First rise: Place dough ball in lightly oiled bowl, cover with damp towel, and let rise in warm spot for about 45 minutes or until doubled in size.
  5. Preheat oven to 475°F (245°C) with pizza stone or baking sheet inside.
  6. Prepare flatbread: Punch down dough and roll out on floured surface into approximately 12×10 inch oval or rectangle. Transfer to parchment paper.
  7. Brush surface lightly with olive oil.
  8. Arrange toppings: Evenly distribute sliced figs over dough, leaving a small border. Scatter crumbled goat cheese and rosemary on top. Add black pepper. Hold off on prosciutto.
  9. Bake: Slide flatbread (on parchment) onto preheated stone or baking sheet. Bake 10-12 minutes until crust is golden and cheese starts to melt.
  10. Add prosciutto and finish: Remove from oven, drape prosciutto slices over hot flatbread. Drizzle with honey and balsamic glaze if using. Add arugula if desired.
  11. Serve: Slice with pizza cutter and enjoy warm or at room temperature.

Notes

Do not overload toppings to avoid soggy dough. Use ripe but firm figs to prevent mushiness. Roll dough about 1/4 inch thick for crisp crust. Add prosciutto after baking to keep it tender. Preheat baking surface well for best results. Reheat leftovers in oven to maintain crispness; avoid microwave.
