These grilled halloumi skewers feature a zesty lemon herb marinade that infuses the cheese with bright, savory flavors and a smoky char from the grill. Perfect for quick weeknight dinners or summer barbecues, they are a crowd-pleasing appetizer or snack.

  • 8 ounces halloumi cheese, sliced into ¾-inch thick pieces
  • 3 tablespoons fresh lemon juice (about 1 large lemon)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh thyme (or oregano)
  • 2 cloves garlic, minced
  • 1 teaspoon honey
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)
  • Wooden or metal skewers (soak wooden skewers in water for 30 minutes before use)

Instructions

  1. Prepare the marinade: In a medium bowl, whisk together lemon juice, olive oil, minced garlic, chopped parsley, thyme, honey, and red pepper flakes if using. Season lightly with black pepper.
  2. Slice the halloumi into ¾-inch thick slices, then cut each slice into 1-inch cubes.
  3. Toss the halloumi cubes gently in the marinade to coat all sides. Cover and let rest at room temperature for 15 minutes.
  4. Thread 3-4 halloumi cubes onto each skewer, leaving space between pieces. Optionally alternate with cherry tomatoes or bell pepper pieces.
  5. Preheat grill or grill pan to medium-high heat (around 400°F / 200°C). Lightly oil the grates or pan.
  6. Grill the skewers for 4-5 minutes per side until golden brown edges and slightly crispy crust form. Flip carefully using tongs.
  7. Remove skewers from grill and let rest for 2 minutes before serving. Serve with extra lemon wedges and fresh herbs if desired.

Notes

Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Avoid over-marinating halloumi to prevent it from becoming mushy. If halloumi sticks to the grill, brush grates with oil again. Broiling or pan-searing are good alternatives if no grill is available.
