  • 1 medium-sized fresh pineapple, peeled and sliced into 1-inch thick rings or wedges
  • 1/4 cup (85g) good-quality honey (or maple syrup for vegan option)
  • 1 teaspoon ground cinnamon (preferably Ceylon cinnamon)
  • 2 tablespoons melted butter or coconut oil (for dairy-free version)
  • 1 tablespoon fresh lime juice
  • Optional: pinch of ground nutmeg or chili powder

Instructions

  1. Peel and core the pineapple, then slice it into 1-inch thick rings or wedges.
  2. In a small bowl, whisk together honey, ground cinnamon, melted butter or coconut oil, and fresh lime juice. Add nutmeg or chili powder if desired.
  3. Preheat the grill or grill pan to medium-high heat, about 375°F (190°C).
  4. Lightly brush one side of each pineapple slice with the glaze.
  5. Place the pineapple slices glaze-side down on the grill and grill for 3-4 minutes without moving to get caramelization and grill marks.
  6. Flip the pineapple slices carefully using tongs.
  7. Brush the other side with the remaining glaze and grill for another 3-4 minutes until glaze thickens and pineapple softens but holds shape.
  8. Remove from grill and let cool slightly for 2 minutes before serving.

Notes

Brush the glaze on pineapple slices twice—before and after grilling—to build flavor and prevent burning. Use medium-high heat to avoid burning the honey glaze. Avoid overcrowding the grill for even cooking. For vegan version, substitute honey with maple syrup and butter with coconut oil. If glaze starts to burn, reduce heat or move pineapple to cooler part of grill.
