A quick and easy homemade fig jam combining fresh figs, honey, balsamic vinegar, and thyme for a sophisticated sweet-tangy flavor perfect for gifting or entertaining.

  • 2 pounds fresh figs, quartered (ripe but firm)
  • ⅔ cup honey (preferably raw or local)
  • ¼ cup balsamic vinegar (aged balsamic preferred)
  • 3 sprigs fresh thyme, leaves stripped and roughly chopped
  • 2 tablespoons fresh lemon juice
  • ¼ cup granulated sugar (optional, adjust to taste)
  • ¼ cup water
  • Pinch of salt

Instructions

  1. Quarter the fresh figs, removing any stems. Strip the thyme leaves from the sprigs and chop coarsely.
  2. Add figs, honey, balsamic vinegar, lemon juice, sugar (if using), water, thyme, and a pinch of salt to a heavy-bottomed saucepan. Stir gently to combine.
  3. Place the pan over medium heat and bring the mixture to a gentle simmer, about 5 minutes, stirring occasionally.
  4. Reduce heat to low and simmer gently, stirring every few minutes, for 25-30 minutes until figs break down and mixture thickens to a rich, glossy amber color.
  5. Test the jam consistency by dropping a spoonful onto a chilled plate; if it wrinkles and doesn’t run back together quickly, it’s done. If not, simmer a few minutes longer.
  6. Remove thyme sprigs if whole sprigs were used to avoid overpowering bites.
  7. Let the jam cool slightly before spooning into sterilized glass jars, leaving about ¼ inch headspace if sealing.
  8. Seal jars and refrigerate once cooled. For longer storage, freeze or process in a water bath canner following safe home-canning guidelines.

Notes

Use ripe but firm figs for best texture. Soak dried figs overnight if fresh are unavailable. Honey can be swapped with maple syrup for a vegan version. Avoid cheap balsamic vinegar for best flavor. Stir gently to preserve fig texture. Cool jam fully before tasting final sweetness. Sterilize jars by boiling before filling for longer storage.
