  • 1 tablespoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cayenne pepper (optional)
  • 2 tablespoons olive oil

Instructions

  1. Trim excess fat from the brisket, leaving about ¼ inch layer to protect the meat during smoking (about 10 minutes).
  2. In a mixing bowl, combine coffee, smoked paprika, brown sugar, kosher salt, black pepper, garlic powder, onion powder, and cayenne pepper if using. Stir well.
  3. Lightly brush the brisket on all sides with olive oil to help the rub stick and form a crust.
  4. Generously coat the brisket with the coffee BBQ rub, pressing it into the meat. Let rest for 30 minutes at room temperature.
  5. Preheat smoker to 225°F (107°C) using hardwood like oak or hickory. Keep water in the smoker’s water pan to maintain moisture.
  6. Place brisket fat side up on smoker grate and smoke for about 6 hours, maintaining temperature and adding wood chips as needed. Check hourly.
  7. When internal temperature reaches 165°F (74°C), wrap brisket tightly in butcher paper or aluminum foil and return to smoker.
  8. Continue smoking until internal temperature reaches 203°F (95°C), about 2-3 more hours.
  9. Remove brisket from smoker and let rest, wrapped, for at least 1 hour to redistribute juices.
  10. Slice thinly against the grain and serve with desired sides or extra coffee BBQ sauce.

Notes

If the bark looks too dark before done, tent loosely with foil to prevent burning. Use a reliable thermometer to monitor internal temperature rather than relying on time alone. Resting the brisket wrapped for at least 1 hour is crucial for juicy meat. Fresh ground coffee is preferred over instant for better texture and flavor. Rub can be prepared in advance and stored airtight for up to 2 weeks.
