  • 4 cups thinly sliced Kirby or pickling cucumbers
  • 1 medium yellow onion, thinly sliced
  • 1 cup white vinegar (5% acidity; apple cider vinegar can be used as a substitute)
  • 1 cup granulated sugar
  • 1 cup water
  • 1 tablespoon mustard seeds
  • 1 teaspoon celery seeds
  • 1 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 tablespoon kosher salt or pickling salt

Instructions

  1. Slice 4 cups of Kirby cucumbers and 1 medium yellow onion thinly, about 1/8 inch thick.
  2. Place sliced cucumbers and onions in a large bowl, sprinkle with 1 tablespoon kosher salt, toss gently, and let sit for 1 hour, stirring occasionally to release excess water.
  3. While cucumbers drain, combine 1 cup white vinegar, 1 cup water, 1 cup granulated sugar, 1 tablespoon mustard seeds, 1 teaspoon celery seeds, 1 teaspoon turmeric, 1/4 teaspoon cayenne pepper, and a pinch of salt in a medium saucepan. Bring to a boil over medium heat, stirring to dissolve sugar and salt completely.
  4. Rinse drained cucumbers and onions briefly under cold water to remove excess salt, then drain well using a colander.
  5. Pour the hot brine over the drained cucumbers and onions, stirring gently to coat evenly.
  6. Transfer the mixture into clean, sterilized glass jars, packing tightly but without smashing. Pour any remaining brine over the top, leaving about 1/2 inch headspace.
  7. Seal jars with lids and let cool to room temperature before refrigerating. Pickles are ready after at least 48 hours, best after about 5 days.

Notes

Ensure cucumbers and onions are salted and drained for at least 1 hour to maintain crispness. Rinse well to avoid overly salty pickles. Use medium heat to dissolve sugar and salt without boiling over. Mustard seeds from a quality brand improve flavor. Pickles improve in flavor after 5 days and last up to 3 weeks refrigerated.
