Instructions

  1. Prep the peaches by washing, peeling, and slicing about 6 medium peaches into thin wedges (about 1/4 inch thick).
  2. In a large bowl, combine sliced peaches with 1/2 cup brown sugar, 1/4 cup granulated sugar, 1 teaspoon ground cinnamon, 1 tablespoon fresh lemon juice, 2 tablespoons cornstarch, and a pinch of salt. Toss gently until coated and juices start to release.
  3. Pour the peach mixture into a greased 9×13-inch baking dish, spreading evenly. Set aside.
  4. In a medium bowl, whisk together 2 cups all-purpose flour, 1 tablespoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, and 1/3 cup brown sugar.
  5. Cut in 6 tablespoons cold unsalted butter using a pastry cutter or two forks until mixture resembles coarse crumbs.
  6. Pour in 1 cup cold buttermilk and stir gently just until combined. Do not overmix.
