  • 3 large eggs, separated (room temperature)
  • 1/4 cup (60 ml) whole milk (or almond/oat milk for dairy-free)
  • 1/2 cup (65 g) all-purpose flour, sifted
  • 1 teaspoon baking powder
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla extract (optional)
  • Butter or oil for greasing the pan

Instructions

  1. Separate the eggs carefully into whites and yolks, ensuring no yolk mixes with the whites. (5 minutes)
  2. In the yolk bowl, add milk and vanilla extract; whisk until combined.
  3. Sift flour and baking powder into the yolk mixture; whisk gently to form a smooth batter. Add a splash of milk if too thick.
  4. Beat egg whites with an electric mixer on medium speed until frothy. Gradually add sugar and increase speed to high. Beat until stiff peaks form. (5-7 minutes)
  5. Scoop one-third of the egg whites into the yolk batter to lighten it, then gently fold in the remaining whites using a spatula with a cutting and folding motion.
  6. Heat a non-stick pan over very low heat and lightly grease with butter or oil.
  7. If using ring molds, grease them and place on the pan. Spoon batter into molds, filling about 3/4 full. Cover with a lid and cook for 4-5 minutes until bottoms are golden and edges are set but top is still jiggly.
  8. Remove lid and gently flip pancakes using a spatula. Cover again and cook for another 3-4 minutes until cooked through but soft inside.
  9. Serve immediately with desired toppings such as syrup, fresh berries, or whipped cream.

Notes

Use a clean, grease-free bowl for whipping egg whites to achieve stiff peaks. Fold egg whites gently to keep batter airy. Cook pancakes on very low heat with a lid to trap steam and help them rise without burning. If pancakes brown too quickly, lower the heat. Ring molds help pancakes rise tall but are optional.
