A refreshing and easy summer salad featuring sweet watermelon, creamy feta, and fresh mint served in individual cups, perfect for parties and casual gatherings.

  • 4 cups seedless watermelon, cubed (about 600 grams)
  • 1 cup crumbled feta cheese (about 150 grams)
  • 1/4 cup fresh mint leaves, finely chopped (about 10 grams)
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 fresh lemon (about 2 tablespoons or 30 ml)
  • Pinch of sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: handful of toasted pine nuts or walnuts

Instructions

  1. Cut about 4 cups of seedless watermelon into bite-sized cubes using a sharp knife to prevent crushing the fruit.
  2. Finely chop 1/4 cup of fresh mint leaves.
  3. In a small bowl, whisk together 2 tablespoons of extra virgin olive oil, juice of one lemon, a pinch of sea salt, and freshly ground black pepper until combined.
  4. In a larger bowl, gently toss the watermelon cubes with crumbled feta cheese and chopped mint.
  5. Pour the dressing over the salad and gently fold to coat without breaking up the watermelon cubes.
  6. Spoon the salad mixture into small serving cups or ramekins, about 1/2 cup per cup.
  7. If using, sprinkle toasted pine nuts or walnuts on top for added crunch.
  8. Chill the salad cups in the refrigerator for at least 15 minutes before serving to let flavors meld and keep cool.

Notes

Use a sharp knife to keep watermelon cubes firm and prevent mushiness. Drain excess juice if watermelon is very juicy by letting cubes sit in a colander for 5 minutes before mixing. Add nuts just before serving to keep them crunchy. Salad can be prepared up to 2 hours ahead and chilled. For vegan version, substitute feta with plant-based cheese or marinated tofu.
