A quick and elegant summer toast featuring ripe nectarines, creamy burrata, fresh basil, and a drizzle of honey on crusty sourdough bread. Perfect for brunch, light lunches, or a fancy appetizer.

Ingredients

  • Thick slices of sourdough bread (preferably day-old)
  • Fresh nectarines, ripe but firm, sliced thinly
  • Burrata cheese, fresh and creamy
  • Fresh basil leaves, washed and torn or chiffonade-cut
  • Honey, mild and floral (such as clover or wildflower)
  • Extra virgin olive oil (optional, for drizzling)
  • Flaky sea salt (such as Maldon)
  • Freshly ground black pepper

Instructions

  1. Wash and dry nectarines. Slice each nectarine into thin wedges about 1/8 inch (3 mm) thick and set aside.
  2. Toast thick sourdough slices in a toaster or on a grill pan over medium heat until golden and crisp but still slightly pliable inside, about 3-4 minutes per side. Transfer to serving plate.
  3. Tear open burrata gently and spread it across each warm toast to soften slightly without over-handling.
  4. Arrange thin nectarine slices over the burrata in a single or slightly overlapping layer.
  5. Tear fresh basil leaves and scatter over the nectarines. Sprinkle flaky sea salt and freshly ground black pepper evenly on top.
  6. Drizzle honey generously over the toast using a small spoon, followed by a light drizzle of extra virgin olive oil.
  7. Serve immediately to enjoy the crisp bread and creamy burrata.
