A quick and easy summer recipe featuring juicy watermelon, tangy feta, and fresh mint on skewers, perfect for refreshing outdoor gatherings.

  • 4 cups seedless watermelon, cut into 1-inch cubes
  • 1 cup crumbled feta cheese
  • 1/2 cup fresh mint leaves, loosely packed and torn by hand
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Pinch of sea salt, to taste
  • Freshly cracked black pepper, to taste
  • 12 to 15 wooden or bamboo skewers, soaked in water for 20 minutes before assembling

Instructions

  1. Rinse and pat dry fresh mint leaves, then tear them gently by hand to release their aroma without bruising.
  2. Cut watermelon into 1-inch cubes, keeping them uniform for even presentation.
  3. Cut feta into similar-sized cubes or crumble if preferred.
  4. In a large mixing bowl, combine watermelon cubes with 2 tablespoons extra virgin olive oil, 1 tablespoon fresh lemon juice, a pinch of sea salt, and freshly cracked black pepper. Toss gently to coat evenly without breaking the watermelon cubes.
  5. Take a skewer and thread a watermelon cube first, followed by a piece of feta, then a fresh mint leaf folded if large. Repeat this sequence until the skewer is full, usually 3-4 sets depending on skewer length. Leave a little space at each end for easy handling.
  6. Place assembled skewers on a platter and refrigerate for 15-20 minutes to chill and meld flavors (optional).
  7. Right before serving, sprinkle a tiny pinch of sea salt over the skewers and add a few extra mint leaves for garnish if desired.

Notes

Use firm, ripe watermelon to avoid mushy skewers. Tear mint leaves by hand to preserve aroma. Soak wooden skewers before grilling to prevent burning. Assemble skewers just before serving for best texture. Optional light grilling adds smoky flavor.
