These creamy high-protein peanut butter overnight oats are a quick and easy breakfast that tastes like dessert but packs 30 grams of protein per serving. Perfect for busy mornings, they require just 5 minutes of prep and simple pantry ingredients.

  • 1 cup (90g) rolled oats
  • 1/2 cup (120g) plain Greek yogurt (full-fat or 2%)
  • 3/4 cup (180ml) milk (whole, almond, or oat)
  • 2 tablespoons (32g) creamy natural peanut butter
  • 12 tablespoons (15-30ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a medium bowl or jar, whisk together the Greek yogurt, milk, peanut butter, honey or maple syrup, and vanilla extract until smooth and fully combined.
  2. Stir in the rolled oats, chia seeds, and a pinch of salt until evenly mixed.
  3. Divide the mixture evenly into two pint-sized jars or airtight containers, leaving about an inch of space at the top.
  4. Seal the jars and refrigerate for at least 6 hours, preferably 8-12 hours or overnight.
  5. In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, extra peanut butter, chopped peanuts, or dark chocolate chips. Serve cold or microwave for 30-60 seconds if desired.

Notes

For best texture, use rolled oats (not instant or steel-cut). Whisk wet ingredients first to evenly distribute peanut butter. Use room temperature peanut butter for easier mixing. Adjust sweetness to taste before refrigerating. Oats keep in the fridge for up to 5 days and can be frozen for up to 3 months.
