  • 4 skin-on salmon fillets (6 oz / 170 g each), wild-caught if possible
  • 3 tablespoons honey (raw or wildflower preferred)
  • 2 tablespoons sriracha sauce (adjust to heat preference)
  • 1 tablespoon low sodium soy sauce (or tamari for gluten-free)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lime juice
  • 1 tablespoon olive oil
  • 1 cedar plank (soaked in water for at least 1 hour before grilling)

Instructions

  1. Soak the cedar plank in water for at least 60 minutes to prevent burning.
  2. In a mixing bowl, whisk together honey, sriracha, soy sauce, minced garlic, lime juice, and olive oil until smooth. Set aside.
  3. Preheat grill to medium-high heat (around 375°F / 190°C). If using charcoal, let coals burn down to even heat.
  4. Pat salmon fillets dry with paper towels. Place skin-side down on the soaked cedar plank. Brush the top generously with the honey sriracha glaze, reserving some for later.
  5. Place the cedar plank on the grill grates. Close the lid and cook for 12-15 minutes. After 8 minutes, open the grill and brush more glaze on the salmon. The salmon is done when it flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  6. Remove the plank from the grill using tongs or a spatula. Let the salmon rest for 3-5 minutes before serving.

Notes

Always soak the cedar plank for at least 1 hour to prevent burning. Apply glaze in layers to avoid burning sugars. Use skin-on fillets for better texture and to hold the fish together. Let salmon rest after grilling to lock in juices. If plank chars too much, move to indirect heat or lower grill temperature. Olive oil brushed on plank helps prevent sticking.
