  • 1 ¾ cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter, melted (can substitute with coconut oil for dairy-free)
  • ¾ cup (150g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (170g) chocolate chips (semi-sweet or dark)
  • ¾ cup (90g) walnuts, toasted and chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, mash 3 ripe bananas with a fork until mostly smooth but still a bit chunky. Set aside.
  3. In a large bowl, whisk together 1 ¾ cups (220g) all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt.
  4. In another bowl, whisk ½ cup (115g) melted unsalted butter with ¾ cup (150g) packed brown sugar until smooth. Add 2 large eggs one at a time, beating well after each. Stir in 1 teaspoon vanilla extract.
  5. Fold the mashed bananas into the wet mixture until combined.
  6. Slowly add the dry ingredients to the wet, stirring gently just until the flour disappears. Do not overmix.
  7. Gently fold in 1 cup (170g) chocolate chips and ¾ cup (90g) toasted chopped walnuts.
  8. Pour batter into the prepared loaf pan and smooth the top. Optionally, sprinkle a few extra chocolate chips and walnuts on top.
  9. Bake for 60-70 minutes, checking doneness by inserting a toothpick in the center. It should come out with a few moist crumbs.
  10. Let the bread cool in the pan on a wire rack for about 15 minutes, then remove it from the pan to cool completely.

Notes

Use ripe bananas for best moisture and flavor. Toast walnuts lightly in a dry skillet for 3-5 minutes to enhance nuttiness. Avoid overmixing the batter to keep the bread tender. Tent with foil if browning too fast. Let bread cool completely before slicing for cleaner cuts.
