Perfect Caramelized Fig Galette with Goat Cheese

A rustic and easy-to-make galette featuring a flaky buttery crust, caramelized figs, and creamy goat cheese, perfect for a cozy meal or entertaining.

  • 1 1/4 cups (150g) all-purpose flour, sifted
  • 1/2 cup (115g) unsalted butter, cold and cubed
  • 1 tablespoon granulated sugar (optional)
  • 1/4 teaspoon salt
  • 34 tablespoons ice water, chilled
  • About 12 medium fresh figs (roughly 500g), sliced thick
  • 4 ounces (115g) goat cheese, softened
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 1 teaspoon fresh thyme leaves, finely chopped
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon vanilla extract (optional)
  • 1 egg beaten with 1 tablespoon water (egg wash)
  • Pinch of flaky sea salt

Instructions

  1. Make the crust: In a large mixing bowl, combine sifted flour, granulated sugar, and salt. Cut in cold, cubed butter using a pastry cutter or food processor until mixture resembles coarse crumbs with pea-sized bits.
  2. Slowly add ice water, stirring gently until dough just comes together. Wrap dough in plastic and chill for at least 30 minutes.
  3. Prepare the figs: Slice fresh figs thickly. Heat brown sugar and honey in a skillet over medium heat until bubbly.
  4. Add figs, thyme, and lemon juice. Cook gently for 5-7 minutes, stirring occasionally, until figs are soft and caramelized but still hold shape. Remove from heat and stir in vanilla extract if using. Let cool slightly.
  5. Roll out the dough on a lightly floured surface into a rough 12-inch circle about 1/8 inch thick. Transfer to parchment-lined baking sheet.
  6. Spread softened goat cheese evenly over dough, leaving a 2-inch border around edges.
  7. Spoon caramelized figs over goat cheese in a single layer, distributing syrup evenly.
  8. Fold edges of dough up and over filling, pleating as needed to form crust. Brush crust edges with egg wash and sprinkle flaky sea salt over figs.
  9. Bake in preheated oven at 375°F (190°C) for 35-40 minutes or until crust is golden brown and crisp. Tent with foil if edges brown too quickly.
  10. Cool galette on wire rack for at least 15 minutes before slicing and serving.

Notes

Keep butter cold for flaky crust. Do not overwork dough to avoid toughness. Caramelize figs gently to prevent mushiness. Use egg wash for golden crust or cream for softer crust. Tent with foil if edges brown too fast. Dough and figs can be prepared a day ahead and refrigerated.
