A fast, fuss-free sheet pan shrimp fajitas recipe ready in 20 minutes, perfect for busy weeknights or last-minute gatherings. Juicy shrimp and roasted veggies with bold fajita spices served with warm tortillas.

  • 1 pound (450g) medium raw shrimp, peeled and deveined
  • 2 large bell peppers (red, yellow, and green), sliced into thin strips
  • 1 medium red onion, thinly sliced
  • 2 tablespoons olive oil (extra virgin preferred)
  • 2 tablespoons fajita seasoning (chili powder, paprika, cumin, garlic powder, onion powder, salt, pepper, pinch of cayenne)
  • 1 lime, juiced, plus wedges for serving
  • A handful fresh cilantro, chopped (optional)
  • 8 small flour or corn tortillas

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the peeled and deveined shrimp with sliced bell peppers and red onion.
  3. Drizzle olive oil over the shrimp and veggies. Sprinkle fajita seasoning evenly on top and toss well to coat.
  4. Arrange the shrimp and veggies in a single layer on a prepared sheet pan, avoiding overcrowding.
  5. Roast in the oven for 10 minutes. Halfway through (around 5 minutes), use tongs to gently flip the shrimp and stir the veggies for even cooking.
  6. Check for doneness: shrimp should be opaque and firm, veggies tender with slight char. Roast an extra 1–2 minutes if needed, watching carefully to avoid overcooking.
  7. Remove from oven and immediately squeeze fresh lime juice over everything. Toss gently to combine.
  8. While shrimp cooks, warm tortillas in a dry skillet or wrapped in foil in the oven for 2–3 minutes.
  9. Spoon shrimp and veggies onto warm tortillas. Garnish with chopped cilantro and extra lime wedges if desired.

Notes

Do not overcrowd the pan to ensure even roasting. Pat shrimp dry before seasoning for better texture. Adjust spice level by adding cayenne or crushed red pepper flakes. Use fresh shrimp if possible; thaw frozen shrimp completely before cooking. For faster cooking, cut large shrimp in half lengthwise. Marinate shrimp briefly if time allows for enhanced flavor.
