  • 1/2 cup protein of choice (cooked chicken, shrimp, tofu, or leftover beef, optional)
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish, optional)

Instructions

  1. Boil the ramen noodles: Bring a large pot of water to a rolling boil. Add the two ramen noodle blocks (discard the seasoning packets). Cook for exactly 2 minutes—you want them al dente, not mushy. Drain the noodles in a colander and rinse them briefly with cold water to stop the cooking. Drizzle with a tiny bit of oil and toss to prevent sticking. Set aside.
  2. Make the sauce: In a small bowl, whisk together the soy sauce, gochujang, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Stir until the gochujang is fully dissolved. Taste and adjust if needed.
  3. Prep your add-ins: Slice your vegetables and have your protein ready to go. If using raw protein, cook it first in the skillet with a little oil until browned, then remove from the pan.
  4. Heat your pan: Place your skillet or wok over high heat. Add the vegetable oil and let it get shimmering hot—almost smoking.
  5. Stir-fry the vegetables: Add your mixed vegetables to the hot pan. Cook for 1-2 minutes, stirring constantly. You want them crisp-tender.
  6. Add the noodles: Toss the parcooked ramen noodles into the pan. Spread them out in an even layer and let them sit undisturbed for about 30 seconds to create crispy bits. Then stir-fry for another minute, tossing everything together.
  7. Pour in the sauce: Drizzle the sauce over the noodles and vegetables. Toss everything together quickly. If adding cooked protein, throw it in now. Keep stir-frying for another 30-60 seconds until everything is hot and glossy.
  8. Finish and serve: Remove the pan from the heat. Sprinkle with sliced green onions and sesame seeds. Serve immediately.

Notes

Don’t overcook the noodles in the boiling water—2 minutes max. High heat is crucial for caramelization. Prep all ingredients before starting to cook. If noodles stick, add a splash of water or more soy sauce. For best texture, serve immediately.
