Refreshing Hibiscus Agua Fresca Recipe with Lime and Mint

This bright, tangy, and incredibly refreshing hibiscus agua fresca is made with dried hibiscus flowers, fresh lime, and mint. It’s a quick and easy, caffeine-free drink that’s perfect for hot days and crowd-pleasing gatherings.

  • 1 cup (about 30g) dried hibiscus flowers (jamaica)
  • 8 cups (1.9 liters) water, divided (4 cups for steeping, 4 cups for diluting)
  • 1/2 cup fresh lime juice (about 45 limes)
  • 1/2 cup loosely packed fresh mint leaves
  • 1/2 to 3/4 cup sweetener of choice (granulated sugar, honey, or agave), to taste
  • Pinch of salt (optional but recommended)

Instructions

  1. Boil the Water: Bring 4 cups (950 ml) of water to a rolling boil in a saucepan. While it’s heating, rinse the dried hibiscus flowers briefly in a colander under cold water to remove any dust.
  2. Steep the Hibiscus: Remove the water from heat and add the rinsed hibiscus flowers. Stir gently, cover, and let steep for 15-20 minutes. The water will turn a deep ruby red.
  3. Strain the Tea: Place a fine-mesh strainer over a large pitcher. Pour the hibiscus mixture through the strainer, catching all the petals. Discard the petals. Let the strained tea cool for about 10 minutes at room temperature.
  4. Add the Sweetener: While the tea is still warm, stir in your sweetener of choice until completely dissolved. If using granulated sugar, add 1/2 cup and stir until dissolved. Taste it — it should be slightly sweeter than you want the final drink to be.
  5. Add Lime Juice and Mint: Juice the limes and add the fresh juice to the pitcher. Stir. Gently bruise the mint leaves by slapping them between your palms or pressing them with the back of a spoon. Add the mint leaves to the pitcher and stir gently.
  6. Dilute and Chill: Add the remaining 4 cups (950 ml) of cold water to the pitcher. Stir together. Taste and adjust — add more lime for tartness, more sweetener if needed, or a tiny pinch of salt. Cover and refrigerate for at least 2 hours, or overnight.
  7. Serve Over Ice: Fill glasses with ice cubes. Give the pitcher a good stir before pouring. Pour the agua fresca over the ice. Garnish each glass with a lime wheel and a sprig of fresh mint. Serve immediately.

Notes

Don’t over-steep the hibiscus (15-20 minutes max) to avoid bitterness. Always taste before chilling — the warm mixture should be slightly stronger and sweeter than desired, as cold dulls flavors. Bruise mint leaves gently, don’t muddle, to avoid bitterness. For best flavor, make a day ahead. For a sugar-free version, use monk fruit sweetener or stevia. For a fizzy version, replace dilution water with sparkling water just before serving.
