Refreshing Honey Peach Lemonade Popsicles with Basil

These popsicles combine ripe peaches, honey, lemon juice, and fresh basil for a refreshing and unique summer treat that’s quick and easy to make.

  • 3 medium fresh peaches, peeled and sliced
  • 1/2 cup (120 ml) fresh lemon juice
  • 1/3 cup (113 g) honey
  • 1012 large fresh basil leaves
  • 1 cup (240 ml) water
  • Zest of 1 lemon (optional)
  • Pinch of salt

Instructions

  1. Peel and slice about 3 medium peaches. Optionally blanch in boiling water for 30 seconds and plunge into ice water to loosen skins (about 10 minutes).
  2. Muddle 10-12 fresh basil leaves gently with the back of a spoon or muddler to release oils without tearing.
  3. In a blender or food processor, combine sliced peaches, lemon juice, honey, water, lemon zest, pinch of salt, and muddled basil leaves. Blend until smooth but with some texture.
  4. Taste and adjust sweetness or tartness by adding more honey or lemon juice as needed.
  5. Optional: Strain the mixture through a fine mesh sieve for a smoother popsicle.
  6. Pour the mixture into popsicle molds, leaving space at the top for expansion.
  7. Insert popsicle sticks and freeze for at least 6 hours or overnight until solid.
  8. To unmold, run warm water on the outside of molds for a few seconds and gently pull out the popsicles.

Notes

Use ripe, juicy peaches for best flavor. Do not overblend to keep some texture. Muddle basil gently to avoid bitterness. Freeze completely before unmolding to prevent breaking. Substitute honey with maple syrup or agave for a vegan option. Mint can replace basil for a different herbal note.
