A quick and easy tropical slushie blending fresh watermelon, mint, and coconut water with a spicy, salty Tajín lime rim for a refreshing summer treat.

  • 4 cups seedless watermelon, cubed (about 600g / 21 oz)
  • 1 cup coconut water (240ml / 8 fl oz)
  • 1/4 cup fresh mint leaves (loosely packed)
  • 1 tablespoon fresh lime juice (about 1 lime)
  • 12 teaspoons agave syrup or honey (optional)
  • 2 cups ice cubes (about 300g / 10.5 oz)
  • 1/4 cup Tajín seasoning (about 30g / 1 oz)
  • 1 lime wedge (for wetting the glass rim)

Instructions

  1. Rub the lime wedge all around the rims of your glasses.
  2. Pour Tajín onto a small plate and dip each glass rim into the seasoning, twisting to coat evenly. Set glasses aside.
  3. In your blender, combine the watermelon cubes, fresh mint leaves, coconut water, lime juice, and agave syrup (if using). Blend on high for about 30 seconds until smooth and vibrant.
  4. Add the ice cubes to the blender. Pulse or blend on high for 20-30 seconds until the mixture is slushy and icy but still smooth. Avoid over-blending.
  5. Taste and adjust the flavor by adding more lime juice or sweetener if needed.
  6. Pour the slushie into the prepared Tajín-rimmed glasses. Garnish with a sprig of mint or a small wedge of watermelon if desired.
  7. Serve immediately.

Notes

Use ripe watermelon for best sweetness. Tear mint leaves gently to avoid bitterness. Pulse ice rather than blending continuously to maintain texture. Tajín rim adds a spicy-salty contrast but can be substituted with chili powder, lime zest, and salt. Freeze watermelon cubes for a thicker slushie.
