  • 1 can (14.75 oz) creamed corn
  • 1 medium jalapeño, finely chopped (remove seeds for less heat)
  • 1 cup (110 g) sharp cheddar cheese, shredded
  • 1/2 cup (120 ml) sour cream (can substitute Greek yogurt)
  • 3 tablespoons (42 g) unsalted butter, melted
  • 2 tablespoons (16 g) all-purpose flour (or gluten-free blend/cornstarch for GF)
  • 1 cup (240 ml) milk (whole or 2%, or dairy-free milk like oat milk)
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Wearing gloves or after washing hands, finely chop the jalapeño, removing seeds if desired. Set aside.
  3. In a large mixing bowl, combine the drained whole kernel corn and creamed corn. Stir gently.
  4. Add the chopped jalapeño, onion powder, garlic powder, salt, and pepper. Adjust seasoning as needed.
  5. In a separate bowl, whisk together melted butter, flour, and milk until smooth and lump-free.
  6. Fold sour cream and about 3/4 cup (82 g) of shredded cheddar cheese into the corn mixture.
  7. Slowly pour the milk and butter mixture into the corn bowl, folding gently to combine until thick but pourable.
  8. Lightly butter or spray an 8×8-inch (20×20 cm) baking dish. Pour the mixture in and smooth the top.
  9. Sprinkle the remaining 1/4 cup (28 g) cheddar cheese evenly over the surface.
  10. Bake for 35-40 minutes until edges bubble and top is golden brown. Cover loosely with foil if cheese browns too quickly.
  11. Let the casserole rest for 5-10 minutes before serving to set.
