  • 1 teaspoon grated ginger

  • 2 stalks green onions, thinly sliced
  • 2 cups shredded cabbage (mix of green and purple)
  • 1 medium carrot, julienned or shredded
  • 2 tablespoons rice vinegar (for slaw)
  • 1 teaspoon honey (for slaw)
  • 1 teaspoon toasted sesame oil (for slaw)
  • Salt and pepper to taste

Instructions

  1. Pat the pork belly chunks dry with paper towels to remove excess moisture. Cut into roughly 1-inch pieces.
  2. In a bowl, whisk together gochujang, soy sauce, honey, rice vinegar, minced garlic, grated ginger, and toasted sesame oil until smooth.
  3. Toss the pork belly pieces in the marinade, ensuring each piece is well coated. Let sit for at least 20 minutes at room temperature or up to 2 hours in the fridge.
  4. In a separate bowl, combine shredded cabbage, carrot, rice vinegar, honey, toasted sesame oil, salt, and pepper. Toss well and set aside.
  5. Heat a heavy skillet or cast iron pan over medium-high heat. Add pork belly pieces in a single layer without overcrowding. Sear for 3-4 minutes per side until caramelized and crispy edges develop. Cook in batches if needed.
  6. Transfer cooked pork bites to a serving plate. Sprinkle with toasted sesame seeds and sliced green onions.
  7. Serve immediately alongside the sesame slaw.
