  • 3 cups (360 g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 23 tablespoons (3045 ml) whole milk or heavy cream
  • Extra rainbow sprinkles for decorating

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC) and line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar on medium-high speed until fluffy and pale, about 3-4 minutes.
  4. Beat in egg and vanilla extract until fully incorporated, scraping down the bowl as needed.
  5. Mix in sour cream on low speed until just combined.
  6. Gradually add the flour mixture in three additions, mixing on low speed until dough just comes together.
  7. Gently fold in rainbow sprinkles with a spatula, being careful not to overmix.
  8. Cover dough with plastic wrap and refrigerate for at least 30 minutes.
  9. Using a cookie scoop or spoon, drop 1.5-tablespoon-sized balls of dough onto prepared baking sheets, spacing about 2 inches apart.
  10. Bake for 10-12 minutes until edges are set but centers still look soft.
  11. Let cookies rest on baking sheet for 5 minutes, then transfer to wire rack to cool completely.
  12. Beat cream cheese and softened butter together until smooth and creamy.
  13. Gradually add powdered sugar and vanilla extract, then add milk or cream to reach desired consistency.
  14. Once cookies are cooled, spread frosting generously and top with extra rainbow sprinkles.

Chill dough for at least 30 minutes to keep cookies soft and prevent spreading. Avoid overmixing dough after adding flour to prevent toughness. Use room temperature ingredients for best texture.
