Easy Melted Witch Halloween Cookie Cake

A quick and easy Halloween dessert that looks like you tried way harder than you actually did. This soft and chewy cookie cake is topped with a melted green witch face, complete with candy eyes and a witch hat.

  • 1 ยฝ cups all-purpose flour (spooned and leveled)
  • ยฝ teaspoon baking soda
  • ยผ teaspoon salt (fine sea salt or table salt)
  • ยฝ cup unsalted butter, softened to room temperature
  • ยพ cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ยฝ cup semi-sweet chocolate chips
  • 1 cup green candy melts (Wilton brand recommended)
  • 1 tablespoon coconut oil or vegetable shortening
  • 2 candy eyes (large, about ยฝ inch wide)
  • 1 small witch hat decoration (edible or food-safe plastic)
  • Optional: black decorating gel for a spooky smile

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Position the rack in the center of the oven. If using a cast iron skillet, place it in the oven while it preheats. If using a cake pan, grease it with butter or non-stick spray and set aside.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together on medium speed until light and fluffy, about 2-3 minutes. Scrape down the sides of the bowl halfway through.
  3. Crack the egg into a small bowl, then add it to the butter mixture along with the vanilla extract. Beat on medium speed until fully combined, about 30 seconds.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed in three additions, mixing just until the flour disappears after each one.
  6. Use a rubber spatula to gently fold the chocolate chips into the dough until evenly distributed.
  7. If using a hot skillet, carefully remove it from the oven using oven mitts. Transfer the dough into the skillet or prepared cake pan. Use a spatula or lightly floured fingers to press it into an even layer, leaving a slightly raised edge.
  8. Bake for 18-22 minutes. At 18 minutes, check: the edges should be golden brown and the center should look slightly underdone and puffy. A toothpick inserted into the center should come out with a few moist crumbs.
  9. Let the cookie cake cool in the pan for 10 minutes, then transfer it to a cooling rack. Let it cool completely, about 30-40 minutes.
  10. Once the cookie cake is completely cool, place the green candy melts and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly between each, until smooth and slightly runny (about 1-2 minutes total).
  11. Using a spoon, dollop the melted green candy onto the top of the cookie cake, focusing on the center. Use the back of the spoon to gently push the candy toward the edges, letting it drip over the sides. Leave some of the golden brown cookie visible.
  12. While the green candy is still wet, place the two candy eyes in the center of the green area and press gently. Place the witch hat slightly above the eyes, angled slightly to the side. If using black decorating gel, pipe a crooked smile below the eyes. Let the decoration set for about 15-20 minutes before serving.

Notes

Don’t overbakeโ€”the cookie continues to cook from residual heat. Room temperature ingredients are important for proper creaming. Thin the candy melts with coconut oil for better drips. Work quickly with decorations as the candy sets fast. The cookie cake tastes even better the next day.
