  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  1. Combine the dry ingredients: In a large mixing bowl, add 1 cup of rolled oats, 2 tablespoons of ground flaxseed (if using), and ¼ teaspoon of salt. Stir to distribute evenly.
  2. Add the wet ingredients: Spoon in ½ cup of creamy peanut butter, ⅓ cup of honey, and 1 teaspoon of vanilla extract. If peanut butter is cold, let it sit out for 10 minutes first.
  3. Mix everything together: Stir with a spatula, pressing the peanut butter into the oats. Continue mixing for about 30 seconds until the mixture holds together when squeezed. If too dry, add a teaspoon of honey; if too sticky, add a tablespoon of oats.
  4. Fold in the chocolate chips: Add ½ cup of chocolate chips and fold gently until evenly distributed. Optionally, reserve a few chips to press onto the tops of the balls.
  5. Chill the mixture (optional but recommended): Refrigerate the bowl for 10-15 minutes to make rolling easier and less sticky.
  6. Roll into balls: Using your hands or a cookie scoop, portion out about 1 tablespoon of mixture and roll into smooth balls. Place on a parchment-lined baking sheet. Makes about 16-18 balls.
  7. Chill to set: Refrigerate the baking sheet for at least 30 minutes (or up to 1 hour) to firm up.
  8. Enjoy! Once set, the balls are ready to eat. If too hard after chilling, let sit at room temperature for 5 minutes before eating.
