  • 3 cups (375g) all-purpose flour
  • 2 cups (400g) granulated sugar
  • 3/4 cup (75g) unsweetened cocoa powder (Dutch-processed preferred)
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup (240ml) buttermilk
  • 1/2 cup (120ml) vegetable oil (canola or avocado)
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) hot coffee
  • 8 oz (226g) cream cheese, softened
  • 1/2 cup (113g) unsalted butter, softened
  • 1 cup (240g) creamy peanut butter (Jif or Skippy recommended)
  • 3 cups (360g) powdered sugar
  • 23 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup (175g) semi-sweet chocolate chips
  • 1/2 cup (120ml) heavy cream
  • 12 cups mini Reese’s Peanut Butter Cups, chopped or whole

Instructions

  1. Preheat oven to 350°F (175°C). Grease three 9-inch round cake pans, line bottoms with parchment paper, and grease the paper.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together buttermilk, oil, eggs, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and mix on low speed until just combined (batter will be thick).
  5. With mixer on low, slowly pour in hot coffee and mix until batter is smooth and thin.
  6. Divide batter evenly among prepared pans. Bake for 22-28 minutes, until a toothpick inserted in center comes out with moist crumbs.
  7. Cool cakes in pans for 10 minutes, then invert onto cooling rack. Remove parchment and cool completely.
  8. For filling: Beat softened cream cheese and butter until smooth. Add peanut butter and beat until combined. Gradually add powdered sugar, then heavy cream and vanilla. Beat on medium-high for 2-3 minutes until fluffy.
  9. For ganache: Place chocolate chips in a heatproof bowl. Heat heavy cream until simmering, pour over chocolate, let sit 5 minutes, then whisk until smooth. Cool 15-20 minutes.
  10. Assemble cake: Place one layer on serving plate, spread 3/4 cup filling on top. Repeat with second layer. Top with third layer. Apply thin crumb coat of remaining filling, refrigerate 30 minutes.
  11. Pour cooled ganache over chilled cake, pushing it over edges to drip down sides. Let set 10 minutes.
  12. Press chopped Reese’s cups onto sides and top of cake while ganache is still tacky.

Notes

Room temperature ingredients are key for best results. Don’t overmix the batter. For clean slices, chill assembled cake for 30 minutes before cutting. The hot coffee deepens chocolate flavor without making cake taste like coffee.
